Easy Meals for Busy Athletes: Creamy Lemon Zucchini Pasta

On Saturday I posted a bike milestone. Today I have 3 more reasons to celebrate!

First, I managed a 1:39/100 meter in the pool! Nothing like drafting off Pablo and being chased by a guy in a white swim cap to speed you up. Even without Pablo’s draft, I managed a 1:49! As someone who used to swim 2:20/100 meter, I was pretty impressed with myself and the remainder of my 2600 meter just breezed by!

The other celebration is that I became a Girls Gone Sporty Ambassador and joined an amazing community of women, who like me, are dedicated to leading health, sporty lives!

ggsLogoI decided to apply to be an ambassador because the Girls Gone Sporty motto resonates with me; A social community for women dedicated to living and leading sporty lives. Women who work hard, play hard, compete and eat, all with the intention of being their best, most positive selves. 

GGS believes that healthy living is contagious and that it is not just about weight loss and I could not agree more! So far all the women I have met are wonderful and I’m hoping some of them will be popping in for some guest blogs in the future!

Girls Gone Sporty Ambassador

My third celebration is the creation of a fast, easy and successful dinner that had Pablo saying “you need to repeat this dish!” For most of my years in the kitchen, I’ve been working on creating simple meals, but since starting ironman training my goal has also been to create quick meals. The last thing you want to do after a long day of working and training is spend hours in the kitchen!

Here’s tonight’s delicious, quick & easy creation:

Creamy Lemon Zucchini Pasta

Ingredients:
1 tbsp olive oil
1 zucchini (or you can do 1/2 zucchini and 1/2 squash)
1/4 tsp dried thyme
1/4 tsp dried rosemary
salt & pepper (to taste)
1 tbsp lemon juice
1/4 cup white wine
1/4 cup whipping cream
2 tbsp parmesan

Directions:
1. Heat olive oil in skillet over medium heat.
2. Add zucchini & squash and season with thyme, rosemary, salt & pepper.
3. Cook until veggies start to become translucent.
4. Stir in 1 tbsp of lemon juice, then stir in 1/4 cup of white wine.
5. Add 1/4 cup whipping cream, stir a few times, then turn off stove.
6. Stir in parmesan.
7. Serve over ravioli or other type of pasta.
Extra: Grill a piece of chicken and mix slices of the chicken into the sauce.

  1. Great recipe! Looking forward to reading new ones, especially because I am trying my best to fuel myself correctly, and provide my body the nutrients it needs to be in great shape, burn fat and also nourish my cravings with healthy bites.

    • I’ve really enjoyed reading Racing Weight and The Feed Zone as I explored recipes and food for endurance athletes! I will def have more recipes coming soon!
