What makes the best breakfast-on-the-go, midday snack and sometimes even dessert?
Banana nut muffins!
Yep, these things are amazing and addictive and good just about any time of the day and in our case when it’s in-season, they’re a must-have, because they can soothe the hunger before it becomes the hangry.
More importantly, they are super easy and fast to make, which is great whether you’re an athlete, parent or everyday busier than ever person! And here’s another secret, these muffins can be modified in many different ways (like adding blueberries or chocolate chips or leftover halloween candy). Just stick to the base recipe and if you’re not using bananas, use 2 eggs instead. That’s it! So simple and trust me, so yummy!
Made it Monday: Banana Nut Muffins
1 1/2 cup whole wheat flour
1/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/3 cup maple syrup
1/3 cup melted butter
2 ripe mashed bananas
1/2 cup walnuts
[You can also add 1/4 cut Hemp seeds and/or 1/4 cup chocolate chips]
Preheat oven to 350 degrees.
Prep your muffin pan by either lining with liners or lightly greasing
In a bowl mix dry ingredients (flour, baking powder, baking soda and salt).
Mix wet ingredients (maple syrup, butter and eggs).
Mix wet ingredients into dry ingredients. Don’t over mix.
Stir in mashed bananas.
Stir in walnuts (and chocolate chips if you want an extra treat!)
Fill muffin cups 2/3 of the way
Bake for 20-25 minutes or until puffed and golden brown and skewer inserted into the center of a muffin comes out clean
They’re ready to eat! The trick is to try not to eat all of them at once!
